Goodlife Foods Recipe: Kids Tiffin, Healthy Snack
Ingredients
High Protein Paneer – 250 g (diced)
Onion – 1 large (diced)
Capsicum – 2 medium (diced)
Butter – 1 tbsp
Oil – 1 tsp
Achari Tikka Seasoning by Goodlife – 4 tbsp
Fresh coriander – a small handful (chopped)
Soft butter – as required
Cheese slice – as required
Method of Preparation
1. In a bowl, mix the diced paneer with Achari Tikka Seasoning and a little butter or oil to coat evenly.
2. Heat a wok over high flame, add butter and oil.
3. Sauté diced onions until translucent, then add capsicum and cook for 1 minute.
4. Add the marinated paneer, stir gently, and cook over high flame for 2–3 minutes until everything is well coated and cooked. Transfer to a bowl and let it cool slightly.
5. Once slightly cooled, mix half (or the full batch) of the paneer-vegetable mixture with mayonnaise and chopped fresh coriander.
6. Spread soft butter on two slices of bread. Layer the paneer tikka filling on one slice, place a cheese slice on top, and cover with the second slice.
7. Heat a grill pan until hot. Apply butter and grill the sandwich until crisp and golden brown on both sides.
8. Cut as desired and serve hot with ketchup, green chutney, or potato chips.
